Flat vs Conical Burrs, Without the Folklore

No coffee debate generates more confident nonsense. The physics is real but subtle, and most of what people taste is downstream of roast choice and technique.

The particle distribution story

Flat burrs shear through a parallel path and produce a comparatively narrow distribution: more particles the same size, extracting at the same rate. The cup reads clean and articulate, which flatters modern light roasts.

Conical burrs produce a wider, bimodal spread. That population of fines adds body and dark-sweet depth, and makes for a more forgiving dial-in. It's the traditional espresso texture for a reason.

How to actually choose

Drinking light-roast straight shots or filter? Flat geometry rewards you. Milk drinks and medium-dark roasts? Conical body cuts through milk, and the forgiveness is worth more than a clarity you'd never taste under foam.
