Since 2019, our partners in Tolima, Colombia, have been honing the art of natural processing. This lot from El Indio shows that hard work does indeed pay off. Grown and harvested by 175 farming families, ripe coffee cherries are carefully dried on raised beds under the close watch of a specialised quality team. The slow, even drying allows the coffee’s natural sugars and fruit plenty of time to really do their thing. The result? A wildly expressive, fruit-forward cup.
