Though coming from Costa Rica's famous La Pastora estate, this bean is processed in the Kenyan style. This method is considerably more complicated, expensive, and labor intensive, but when done right the results are phenomenal. Done to a Fully City (light) roast, this bean offers a medium body and high acidity. Expect bright notes of cherry up front, but a surprisingly smooth finish.
