The coffee comes from the Chelbesa Wet Mill (village) located in Yirgacheffe. This region of Ethiopia is known as the birthplace of coffee. With the natural processed coffee, the cherries are picked at their ripest. The fruit is not removed from the beans (as opposed to washed, when the fruit is removed immediately). The cherries are laid out onto dry beds for several weeks, constantly being turned to allow even drying and preventing spoilage. The drier climate of Yirgacheffe is also ideal for this kind of process. Once the cherries are dried, the fruit is removed from the beans and then prepared for export.
