Why Your Pour-Over Tastes Flat (and the Quick Fixes)
By the dialed team · 5 min read · Updated 2026-06-06
Pour-over is coffee at its most transparent, with nowhere for flaws to hide. If your cup is flat or sour, it's almost always one of five things.
Grind and water temperature
Too coarse and too cool under-extracts into sourness and thinness. Light roasts in particular want near-boiling water (96 to 100°C) and a medium grind. A temperature-control gooseneck kettle removes the biggest source of guesswork.

Ratio, pour and filter
Start at 1:16, say 22 g coffee to 350 g water. Pour in slow, even spirals to keep the bed level. And your filter matters more than you'd think: paper thickness changes flow rate and cup clarity, which is why V60 users argue about Japanese versus Dutch papers.
