About the Cultivar Originally collected from the Gesha forests of Ethiopia, Gesha is celebrated for its remarkable aromatic complexity, refined acidity, and elegant structure. At Las Margaritas, the washed process highlights a more transparent expression of the cultivar, allowing floral aromatics, ripe fruit, and vibrant acidity to remain beautifully defined. The result is a cup with exceptional clarity, silky texture, and enduring balance. About the Process Washed Only fully ripe cherries are harvested before flotation removes lower-density fruit. The cherries undergo approximately 18 hours of fermentation in open tanks, followed by depulping and a further 24 hours of aerobic fermentation. After fermentation, the remaining mucilage is thoroughly washed away before drying. Drying takes place in mechanically controlled silos for 3–5 days at approximately 38°C, after which the coffee rests in climate-controlled storage maintained between 18–19°C to stabilize moisture and preserve cup quality. This carefully managed washed process produces exceptional clarity while maintaining sweetness, vibrant acidity, and a creamy mouthfeel.
