Process: Natural Category: Singular Series Tasting Notes: Lavender • Orange • Starfruit Why This Coffee Matters The Las Margaritas Gesha Natural is one of the most expressive coffees in Café Granja La Esperanza's Singular Series. Rather than emphasizing intensity through extended fermentation, this lot demonstrates how a carefully managed natural process can produce remarkable aromatic complexity while maintaining balance and transparency. Lavender and jasmine bring refined floral aromatics, while orange, starfruit, guava, and tangerine create a bright, layered fruit profile. A silky body, delicate cocoa sweetness, and a clean chamomile finish complete a cup that feels vibrant yet composed. For Ogni, this coffee offers a distinctly different expression of Gesha—one built around fragrant florals and vivid tropical citrus rather than heavier fruit or fermentation character. Producer Background Café Granja La Esperanza (CGLE) is recognised worldwide for its cultivation of exceptional coffee varieties and its meticulous approach to coffee production across several farms in Valle del Cauca, Colombia. Las Margaritas has become one of the estate's flagship farms, producing celebrated cultivars including Gesha, Sudán Rumé, Sidra, Laurina, and Mandela. As part of the Singular Series, this lot reflects CGLE's commitment to precision farming and careful processing while offering a transparent expression of origin. About the Cultivar Originally collected in Ethiopia, Gesha is celebrated for its refined aromatics, elegant acidity, and remarkable clarity. At Las Margaritas, the combination of elevation, climate, and careful cultivation produces a lively expression of the cultivar. This natural lot balances floral aromatics with vibrant citrus and tropical fruit while maintaining the clean structure and elegance that define exceptional Gesha. About the Process Natural Only fully ripe cherries are selected before flotation removes lower-density fruit. Once prepared, the cherries are measured for Brix (sugar concentration) before undergoing 72 hours of open-tank fermentation. The coffee is then dried in mechanical dryers for 8–12 days at approximately 38°C, before resting in climate-controlled storage maintained between 18–19°C to stabilise moisture and preserve cup quality. This carefully controlled natural process develops sweetness, body, and layered fruit while maintaining exceptional clarity in the cup. Terroir Las Margaritas is located near Caicedonia in Colombia's Valle del Cauca. For this lot, CGLE documents: Elevation: 1,648–1,852 m.a.s.l. Annual rainfall: Approximately 2,267 mm Temperature: 15–31°C Relative humidity: 80–86% Cultivated area: 9.58 hectares These conditions promote slow cherry maturation, encouraging excellent sugar development and producing coffees with expressive aromatics, vibrant acidity, and exceptional sweetness. In the Cup Lavender introduces an elegant floral aroma before notes of orange and starfruit brighten the cup. Guava and tangerine add layers of fresh fruit, while subtle jasmine and chamomile contribute delicate botanical complexity. Powder cocoa provides a gentle sweetness beneath the fruit, and the silky body carries the flavours into a clean, lingering finish.
