This high-altitude Caturra Honey micro-lot reflects careful craftsmanship and sustainable farming practices. The coffee undergoes selective handpicking, flotation sorting, and controlled anaerobic fermentation inside GrainPro bags for six days to enhance sweetness and complexity. After depulping, mucilage is partially retained to develop a silky body and natural sugar expression. The beans are then dried on parabolic beds for about 25 days with regular turning to ensure even moisture stabilization, followed by a 30-day resting period in GrainPro bags to mature and harmonize flavors. The farm is committed to sustainability and quality improvement. Starting with 2,000 coffee trees planted in 2009, the farm has grown to about 6,000 coffee trees, cultivating Caturra and Castillo varieties with ongoing renewal and future expansion.
