The rich volcanic mountain soil coupled with the higher elevation of the highlands offer the perfect conditions for growing coffee. Because of the jade color and the appearance of the beans, this region is referred to as the Jade Mountain and is renowned as it’s becoming one of the highest quality for specialty coffee in Vietnam. Processing starts with ripe cherries that are depulped and washed clean before being sun dried as much as possible before finish in a mechanical drier. This traditional processing makes for the cup characteristics popular for this region, and the green coffee color that locals refer to as jade.
