The honey process consists of leaving the mucilage in the beans. As a result, farmers use considerably less water because the washed stage is skipped. The type of variety, the way it is produced (less water), and the honey process (which consists of allowing the beans to ferment in a controlled way with its mucilage) allow coffee lovers to enjoy a perfect combination of sweet and sour.
