The Story The Origin The Roast We’ve enjoyed working with the farmers of COMSA cooperative more and more over the years. Their incredible coffees have only gotten better with each new harvest. During the Natural Process, whole coffee cherries are dried in the sun with the fruit intact, leading to sweet, fruity, and complex flavors. The fruit's sugars ferment and penetrate the bean during the weeks-long drying period, creating a rich, wine-like profile that can be more pronounced than the cleaner, more subtle flavors of washed (wet-processed) coffee.
