Roasters notes: This is our second year purchasing crop from Peru. The prodigal team is super helpful and this allows us to purchase some very interesting beans, but without having to commit to larger volume. The farm Shipago has approximately 20 hectares of land dedicated to growing geisha, bourbon, catuaí, catimor, and pacamara. Surrounding the farm is more than 200 hectares of natural forest. This coffee was first fermented in cherry for 24 hours. Then it was floated to remove defects, pulped, and fermented another 96 hours. Despite many hours of "fermentation", this coffee is incredibly clean without any trace of process flavor. Process: Washed Region: Utcubamba, Peru Varieties: Geisha
