Coffee from San Antonio Huista and Unión Cantinil is produced by smallholder farmers cultivating small, diversified farms at high altitudes between 1200–1600 masl. Cooler temperatures slow fermentation, enhancing clarity and complexity in the cup. Cherries are carefully handpicked, sorted by density, pulped, fermented, and washed with clean, filtered water—often using traditional methods that protect local waterways—before being sun-dried. In these remote regions, where transport relies on horses and mules, more than 500 producers grow varieties like Catuai, Caturra, and Pache in mineral-rich soils. San Antonio Huista also serves as a key hub where farmers gather to trade and access resources. The result is a coffee that reflects both the rugged landscape and the dedication of the communities behind it.
