With the Descafecol method, caffeine is extracted from the coffee beans using a solvent called ethyl acetate (a natural distillate from sugar cane, blackberries, beets, or sometimes grapes) in a process known as solvent-based extraction. The coffee beans are steamed and then rinsed multiple times with ethyl acetate to remove the caffeine.
