When a coffee cherry forms it usually consists of 2 halves formed in each bean. Peaberrys occur when only one half develops and are sorted through the milling process. Sometimes called "pearl" coffees they produce an intense taste amplified by the smaller bean. Very high in acidity it represents a bright flavorful cup from Africa that is similar to Kenyas but not Ethiopians. We roast it medium for a bright acidity profile.
