That's why we source the best single origin decaffeinated coffees we can find and put just as much care and effort into the roast as we would for any of our caffeinated coffees. Many producers contributed to this coffee from their small farms in various municipalities of Cauca, Colombia. The coffees were selected for traits that tend to hold up well to the decaffeination process—like sweetness and expressive acidity. The coffee was then decaffeinated using the Ethyl Acetate process. The EA decaffeination process produces the best decaf coffees we’ve had with loads of sweetness and fruit.
