This bar begins in southern Belize, where Maya Mountain has become one of the most respected fermentories in craft chocolate. Working with hundreds of smallholder farmers from the Q'eqchi' and Mopan Maya communities, they've built a model for what responsible cacao sourcing can look like at its best. The result is a 75% single-origin dark chocolate with real depth: creamy and approachable for its percentage, with tasting notes of raspberry, caramel, and chocolate pudding that unfold as it melts. Roasted and crafted from scratch in our Bend, Oregon workshop, full 1.75 oz bar. One origin. One fermentory. Hundreds of farmers who made it possible.
The catalog often lists the same model at several merchants — worth a price check before you buy.
