ASD Process (Anaerobic Slow Dry) Lot 16 T3D undergoes a carefully controlled fermentation and drying approach designed to enhance complexity while maintaining clarity. Anaerobic fermentation Whole cherries are sealed in tanks for three days without oxygen. This encourages CO₂ build up and promotes a more intense development of fruit driven sweetness and acidity. Slow dry After fermentation, cherries are dried slowly on raised beds over several weeks. This extended drying phase supports stability, clarity, and a clean finish in the cup.
