The second win is a brew temperature that stays put. Because the brew boiler does nothing but hold it, a PID keeps it flat to within roughly a degree, shot after shot. Plumb-in is the other prosumer feature to weigh. A rotary pump connects straight to your water line, so you never refill a tank, and it runs quieter than the buzzy vibratory pump in most home machines. The catch: brew temperature is harder to pin down, so you run a short cooling flush before each shot to dump superheated water, and you lose some dial-in precision. Plan on 20 to 30 minutes from cold for full thermal stability, even though the boilers heat water faster than that.
