Notes Black Cherry, Baking Spice, Fudge Origin Huila, Colombia Varieties Tabi, Castillo, Caturra Process Sugar Cane Decaffeination This regional selection from Huila is a great example of the sweetness and clarity of flavor possible in a well processed decaf coffee. We’re tasting a round and full-bodied cup profile with notes of stone fruit, warm spices and rich chocolate. After processing, this lot was decaffeinated with the sugar cane process as the Descafecol facility in Caldas, Colombia. This process uses the naturally occurring compound ethyl acetate, which binds with caffeine molecules during a gentle soaking process. While the caffeine content gets washed away, this method leaves the inherent characteristics of the coffee intact.
