These beans are Colombian Organic beans and the only difference is that we roast at a higher temperature to reflect the traditional coffee roasts from 19th century Europe. Given the higher roasting temperature, the coffee beans are less acidic and have a lower caffeine content. On the flip side, the coffee beans often are considered to be double roasted as the tasting profile of the coffee bean is an intense, bold and smoky-sweet flavor.
